Kay never gave the recipe and everyone from Ketchikan, Alaska wanted it - so we found a spy worthy of Gabriel Allon and here is the recipe:
Ingredients
For the Crust
- 1 cup graham cracker crumbs
- ½ cup peanut butter
- 2 Tbsp honey
- ⅓ cup dry roasted peanuts, finely chopped
- ⅓ cup melted butter
For the Filling
- 4 oz cream cheese, softened
- 1 cup powdered sugar
- ⅓ cup creamy peanut butter + 2 Tbsp extra
- ½ cup milk
- 12 oz Cool Whip, softened
Instructions
- Make the crust: Blend graham cracker crumbs, ½ cup peanut butter, honey, chopped peanuts, and melted butter. Press into a 9-inch pie pan. Freeze briefly while preparing filling.
- Make the filling: In a large bowl, whip cream cheese, powdered sugar, and peanut butter until smooth. Slowly add milk while mixing.
- Fold in Cool Whip gently until fully combined and fluffy.
- Spread filling into prepared crust. Freeze at least 4 hours or overnight.
- Thaw slightly before serving. Garnish with extra chopped peanuts if desired.
