This simple baked chicken uses olive oil, lemon, garlic, and herbs to create juicy meat and crispy skin. It’s versatile enough for everyday Mediterranean meals or as a celebratory dish when paired with festive sides.
Ingredients
- 4 bone-in chicken thighs or drumsticks
- 2 Tbsp extra-virgin olive oil
- Juice + zest of 1 lemon
- 3 garlic cloves, minced
- 1 tsp dried oregano or thyme
- Salt & pepper, to taste
Instructions
- Preheat oven to 400°F (200°C).
- Pat chicken dry and place in a baking dish.
- Whisk EVOO, lemon, garlic, oregano, salt, pepper. Rub onto chicken.
- Bake uncovered ~40–45 min, until crisp and 165°F inside.
- Rest 5 min before serving. Pair with roasted vegetables or salads.
