Crispy Baked Chicken Wings

Crispy, oven-baked wings with Mediterranean-friendly seasoning. Technique-forward, no deep fryer needed.

Ingredients

  • 2 pounds chicken wings
  • 2 tablespoons extra-virgin olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • Optional: 1 teaspoon dried oregano or thyme
  • To finish: lemon wedges, chopped flat-leaf parsley

Instructions

  1. Preheat oven to 425°F (220°C). Line a rimmed sheet pan with parchment or fit with a wire rack.
  2. Pat wings very dry. Dry surfaces brown and crisp better.
  3. Toss with olive oil, garlic powder, smoked paprika, salt, pepper, and oregano/thyme.
  4. Arrange in a single layer. Bake 40–45 minutes, flipping once at ~25 minutes, until crisp and golden (internal temp ≥ 165°F / 74°C).
  5. Finish with lemon juice and parsley. Serve immediately.
