Crispy Baked Chicken Wings
Crispy, oven-baked wings with Mediterranean-friendly seasoning. Technique-forward, no deep fryer needed.
Ingredients
- 2 pounds chicken wings
- 2 tablespoons extra-virgin olive oil
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- Optional: 1 teaspoon dried oregano or thyme
- To finish: lemon wedges, chopped flat-leaf parsley
Instructions
- Preheat oven to 425°F (220°C). Line a rimmed sheet pan with parchment or fit with a wire rack.
- Pat wings very dry. Dry surfaces brown and crisp better.
- Toss with olive oil, garlic powder, smoked paprika, salt, pepper, and oregano/thyme.
- Arrange in a single layer. Bake 40–45 minutes, flipping once at ~25 minutes, until crisp and golden (internal temp ≥ 165°F / 74°C).
- Finish with lemon juice and parsley. Serve immediately.
Why This Fits the Mediterranean Pattern
- EVOO over seed oils: Monounsaturated fat base.
- Herbs & spices: Flavor without excess sodium or sugar.
- Lemon finish: Brightness reduces need for heavy sauces.
- Oven-baked: Less added fat than deep-frying.
Pair with a big veg side or salad and a whole grain to round out the plate.
